Ingredients
- – 7-9 oz (200-250 g) thick/sturdy Tortilla Chips, or as needed
- – 3 cups (300 g) Cheese, or as needed (see notes)
- – 1 lb (500 g) Chicken Breast, diced into very small chunks (at room temp)
- – 3 tbsp (45 ml) Fajita Seasoning (homemade or store-bought)
- – 3 small Peppers, finely diced (1x Red 1x Green 1x Yellow)
- – 1 medium Red Onion, finely diced
- – 1/2 Lime, juice only
- – 1/4 cup (60 ml) Pickled Jalapeños, finely diced (optional)
- – Vegetable Oil, as needed (or oil you have on hand)
- – finely diced Coriander/Cilantro
- – 1 cup (240 ml) Guacamole
- – 1 cup (240 ml) Salsa
- – 1 cup (240 ml) Dairy-Free Sour Cream
Instructions
- Preheat the oven to 350°F (180°C).
- Place the chicken pieces into a bowl. Set aside 1 teaspoon of the fajita spice mix for the vegetables, and mix the remaining seasoning thoroughly with the chicken using a spatula. Set aside.
- Pour 1 tablespoon of oil into a pan and warm it over medium-high heat. Add the chicken and cook until the inside is no longer pink and the outside is nicely browned. Take the chicken out of the pan.
- Add about 1 teaspoon of oil to the same pan, then toss in the diced peppers, onion, and jalapeños if you’d like. Cook until they start to soften, then mix in 1 teaspoon of the fajita seasoning. Continue cooking until the vegetables are fully softened and begin to char.
- Turn off the heat.
- Return the chicken to the pan and mix in the juice from half a lime. Set the pan aside.
- Arrange half of the tortilla chips on a baking tray, then layer with half of the chicken and half of the cheese. Repeat with another layer, then bake for 15 minutes or until the cheese is melted and bubbly.
- Sprinkle with chopped coriander/cilantro and serve alongside guacamole, salsa, and dairy-free sour cream.
Notes
- Use a combination of cheddar and Monterey Jack cheese for a delicious blend on the nachos.
- Ensure the chicken is finely diced to evenly distribute on the nachos.
- Feel free to personalize the vegetables with your preferred choices like mushrooms or black olives.
