Ingredients
- – 1 tablespoon (15 ml) olive oil
- – 1 1/2 pounds (680 g) boneless skinless chicken breasts, sliced thin
- – 2 tablespoons (30 ml) chopped cilantro
- – 1 1/2 teaspoons (8 ml) chili powder
- – 1 teaspoon (5 ml) dried oregano, crushed between the palms of your hands
- – 1 teaspoon (5 ml) ground cumin
- – 1/2 teaspoon (3 ml) garlic powder
- – 1 teaspoon (5 ml) hot sauce, or to taste
- – Salt and freshly ground black pepper to taste
- – 1/2 of a lime, juiced
- – 1 tablespoon (15 ml) olive oil
- – 1 red bell pepper, thinly sliced
- – 1 yellow bell pepper, thinly sliced
- – 1 small yellow or white onion, thinly sliced
- – 1 teaspoon (5 ml) chili powder
- – Salt and freshly ground black pepper to taste
Instructions
- In a large mixing bowl, combine all the chicken-related items. Toss the chicken until it’s well-coated with the marinade and allow it to sit for 15-30 minutes.
- Heat a 12-inch cast iron skillet on high with a tablespoon of olive oil. Once the skillet is hot, add the sliced peppers, onion, chili powder, salt, and pepper. Cook the peppers and onion for about 4-5 minutes until they are soft and caramelized. Transfer the peppers and onions to a plate and keep them aside.
- Pour a bit more oil into the hot skillet, then add the chicken pieces. Arrange them in a single layer and let them cook undisturbed for 2-3 minutes to get a good sear. Stir the chicken and continue cooking until it is fully cooked and no longer pink.
- Return the peppers and onions to the skillet and cook everything together for another minute. Take it off the heat and drizzle the juice from the other half of the lime over the fajitas. Serve with warmed tortillas and your choice of toppings.
