Description

A delightful Chicken Florentine recipe featuring tender chicken breasts, vibrant spinach, and a rich creamy sauce with Parmesan cheese.

Ingredients

  • 2 chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Pasta or rice for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then sear them until golden and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, mixing until smooth.
  3. Add fresh spinach and cook until wilted.
  4. Return the chicken to the skillet, add lemon juice, and let everything simmer together for a few minutes.
  5. Serve the Chicken Florentine over pasta or rice and garnish with fresh parsley.

Notes

Consider infusing olive oil with garlic for extra flavor. You can replace chicken breasts with thighs for a different taste.
