Ingredients
- 2 chicken breasts
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
- Pasta or rice for serving
Instructions
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then sear them until golden and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, mixing until smooth.
- Add fresh spinach and cook until wilted.
