Description

Quick and flavorful chicken foil packets with potatoes, garlic butter, and barbecue sauce grilled to perfection.


Ingredients

  • 4 medium yellow or red potatoes
  • Salt and pepper to taste
  • 4 tablespoons garlic butter
  • 4 boneless, skinless chicken breasts (about 5 ounces each)
  • 1 cup barbecue sauce


Instructions

  1. Preheat the grill to medium-high heat (400°F to 450°F).
  2. Tear four pieces of heavy-duty foil, each 18 inches long, and spray the center with cooking spray.
  3. Slice the potatoes into ¼-inch thick rounds and season with salt and pepper. Place them in the center of each foil piece and dot with garlic butter.
  4. Place one chicken breast on each pile of potatoes, then coat with barbecue sauce.
  5. Seal the packets tightly by folding the long sides and then the ends.
  6. Grill the packets for 25-30 minutes, flipping halfway through.
  7. Check that the chicken is cooked to 165°F and let rest for 5 minutes before serving.
