- 1/4 cup (60ml) milk
- 1/2 teaspoon (3 ml) black pepper
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (30g) fresh parsley
- 1 tablespoon (15 ml) vegetable oil
- 1 onion sliced
- 2 garlic cloves minced
- 1 red bell pepper diced
- 7 ounces (200g) sliced mushrooms
- salt and pepper
- 2 cooked chicken breasts cubed
Instructions
- Begin by setting your oven to 360°F (180°C) to preheat.
- Combine the egg mixture elements thoroughly and put aside.
- Warm the oil in a pan over medium to high heat.
- Introduce the onion, garlic, red pepper, and mushrooms to the pan, seasoning lightly with salt and pepper. Sauté until tender.
- Incorporate the cubed chicken breasts into the pan, mixing well with the vegetables.
- Drizzle the egg mixture over the contents in the pan and allow to cook until the bottom starts to firm, leaving the top slightly liquid.
- Transfer the pan to the oven and let it bake for 10 to 15 minutes until the eggs are fully set.
- Allow the dish to rest for 5 to 10 minutes prior to serving.
