Ingredients

  • – 1 ¾ cups (415 ml) chicken broth
  • – ¼ cup (60 ml) heavy cream
  • – 1 teaspoon (5 ml) Worcestershire sauce
  • – 1 teaspoon (5 ml) mustard powder
  • – 1 teaspoon (5 ml) honey
  • – 1/2 chicken bouillon cube
  • – 1/2 teaspoon (3 ml) EACH: onion powder, oregano, basil, parsley
  • – 2 large boneless skinless chicken breasts
  • – Salt/Pepper
  • – 2 teaspoons (10 ml) parsley
  • – 1-2 tablespoons (15-30 ml) olive oil
  • – ¾ cup (180 ml) apple juice, see notes
  • – 4 cloves garlic, minced
  • – 3 tablespoons (45 ml) butter
  • – 3 tablespoons (45 ml) flour
  • – ½ cup (50 g) freshly grated alternative cheese
  • – 1 tablespoon (15 ml) fresh lemon juice


Instructions

  1. Mix the sauce components in a large spouted measuring cup and set them aside for later. Prepare all other ingredients before you start.
  2. Cut the chicken breasts horizontally to create 2-3 thinner pieces. Place them under plastic wrap and use a meat mallet to pound them to a thickness of ½ inch.
  3. Sprinkle salt, pepper, and parsley on both sides of the chicken pieces.
  4. Warm olive oil in a large skillet over medium-high heat. Cook the chicken in batches for 4-5 minutes on each side until a golden crust forms. Remove from the skillet and set aside.
  5. Turn off the heat. Pour in the apple juice, then adjust the heat to medium. Use a silicone spatula to scrape the bottom and sides of the skillet to lift the browned bits, which will enhance the sauce’s flavor. Allow it to gently bubble and reduce for 2 minutes. Add the minced garlic and continue cooking for 2-3 more minutes until the liquid reduces by half.
  6. Melt the butter in the skillet and mix in the flour, stirring to incorporate. Cook for 1-2 minutes to remove the raw flour taste.
  7. Gradually pour in the sauce mixture from the first step, stirring continuously. Bring it to a boil, then lower the heat to let it simmer. Allow it to simmer and thicken for about 8 minutes.
  8. Lower the heat and slowly add the grated cheese, stirring constantly. Mix in the lemon juice.
  9. Return the chicken to the skillet and spoon the sauce over it. Warm through for 5 minutes or until the sauce reaches your preferred consistency. Sprinkle with parsley and serve with mashed potatoes and your choice of roasted vegetables.
