Ingredients
- 2 tablespoons vegetable oil (30 ml)
- 1 large onion, chopped (2 cups, chopped) (300 g)
- 1 tablespoon minced garlic (15 ml)
- 1 lb. shredded chicken (450 g)
- 2 cups tomato puree (500 g)
- 1 cup chicken stock (200 ml)
- 16 oz. potato gnocchi (450 g)
- 1 cup shredded beef mozzarella (120 g)
- 1/2 cup shredded cheddar (50 g)
- 1 1/2 teaspoons (8 ml) salt, divided
- Black pepper, to taste
- Fresh basil, for garnish
Instructions
- Set your oven to 400°F and allow it to preheat.
- Warm the vegetable oil in a skillet that can go in the oven, using medium-high heat.
- Once heated, add the chopped onion and sprinkle with ½ teaspoon of salt. Sauté until the onion becomes tender, approximately 5-6 minutes.
- Introduce the minced garlic, cooking until its aroma is released, roughly 1-2 minutes.
- Incorporate the shredded chicken and heat it for about 2-3 minutes.
- Pour in the tomato puree and chicken stock, seasoning with 1 teaspoon of salt and a dash of black pepper.
- Mix in the potato gnocchi, ensuring it is evenly coated.
- Spread the shredded mozzarella and cheddar on top.
- Place the skillet in the preheated oven and bake for 25 minutes, or until the top is golden and bubbling.
- Allow it to sit for 5-10 minutes to cool slightly before serving.
