Ingredients

  • 2 tablespoons vegetable oil (30 ml)
  • 1 large onion, chopped (2 cups, chopped) (300 g)
  • 1 tablespoon minced garlic (15 ml)
  • 1 lb. shredded chicken (450 g)
  • 2 cups tomato puree (500 g)
  • 1 cup chicken stock (200 ml)
  • 16 oz. potato gnocchi (450 g)
  • 1 cup shredded beef mozzarella (120 g)
  • 1/2 cup shredded cheddar (50 g)
  • 1 1/2 teaspoons (8 ml) salt, divided
  • Black pepper, to taste
  • Fresh basil, for garnish


Instructions

  1. Set your oven to 400°F and allow it to preheat.
  2. Warm the vegetable oil in a skillet that can go in the oven, using medium-high heat.
  3. Once heated, add the chopped onion and sprinkle with ½ teaspoon of salt. Sauté until the onion becomes tender, approximately 5-6 minutes.
  4. Introduce the minced garlic, cooking until its aroma is released, roughly 1-2 minutes.
  5. Incorporate the shredded chicken and heat it for about 2-3 minutes.
  6. Pour in the tomato puree and chicken stock, seasoning with 1 teaspoon of salt and a dash of black pepper.
  7. Mix in the potato gnocchi, ensuring it is evenly coated.
  8. Spread the shredded mozzarella and cheddar on top.
  9. Place the skillet in the preheated oven and bake for 25 minutes, or until the top is golden and bubbling.
  10. Allow it to sit for 5-10 minutes to cool slightly before serving.
