A comforting and hearty casserole featuring golden hash browns, tender chicken, and creamy cheese, perfect for family dinners.
Ingredients
- 3 cups frozen hash browns (slightly thawed, about 8 ounces)
- 2-3 cups cooked chicken (cut into bite-size pieces)
- 1/4 cup bacon bits (or crumbled cooked bacon)
- 1 cup cheddar cheese (shredded, for the casserole)
- 10.5 oz cream of chicken soup (condensed)
- 1/2 cup milk
- 12 oz frozen mixed vegetables (thawed slightly)
- 1/8 tsp dried thyme
- 12-14 Ritz crackers (crushed)
- 1/2 cup cheddar cheese (shredded, for topping)
Instructions
- Preheat your oven to 400°F.
- In a large mixing bowl, combine the thawed hash browns, cooked chicken, bacon bits, 1 cup of shredded cheddar cheese, thawed mixed vegetables, condensed cream of chicken soup, milk, and dried thyme.
- Stir the mixture until all ingredients are well coated.
- Grease a 7×11-inch baking dish with cooking spray or oil.
- Spread the hash brown mixture evenly into the prepared dish.
- In a small bowl, crush the Ritz crackers and mix with the remaining 1/2 cup of cheddar cheese.
- Sprinkle the cracker and cheese topping evenly over the casserole.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
- Allow the casserole to rest for 10–15 minutes before serving.
Notes
Add extra crushed crackers on top for a crunchier texture.
