Description

A comforting and hearty casserole featuring golden hash browns, tender chicken, and creamy cheese, perfect for family dinners.


Ingredients

  • 3 cups frozen hash browns (slightly thawed, about 8 ounces)
  • 2-3 cups cooked chicken (cut into bite-size pieces)
  • 1/4 cup bacon bits (or crumbled cooked bacon)
  • 1 cup cheddar cheese (shredded, for the casserole)
  • 10.5 oz cream of chicken soup (condensed)
  • 1/2 cup milk
  • 12 oz frozen mixed vegetables (thawed slightly)
  • 1/8 tsp dried thyme
  • 12-14 Ritz crackers (crushed)
  • 1/2 cup cheddar cheese (shredded, for topping)


Instructions

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the thawed hash browns, cooked chicken, bacon bits, 1 cup of shredded cheddar cheese, thawed mixed vegetables, condensed cream of chicken soup, milk, and dried thyme.
  3. Stir the mixture until all ingredients are well coated.
  4. Grease a 7×11-inch baking dish with cooking spray or oil.
  5. Spread the hash brown mixture evenly into the prepared dish.
  6. In a small bowl, crush the Ritz crackers and mix with the remaining 1/2 cup of cheddar cheese.
  7. Sprinkle the cracker and cheese topping evenly over the casserole.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
  10. Allow the casserole to rest for 10–15 minutes before serving.

Notes

Add extra crushed crackers on top for a crunchier texture.
