A delightful blend of tender chicken, vibrant vegetables, and lo mein noodles, perfect for a comforting family dinner.
Ingredients
- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Heat a large skillet or wok over medium-high heat and add sesame oil.
- Sauté the chicken breasts until golden brown and fully cooked, about 6–8 minutes. Remove and set aside.
- In the same skillet, add sliced bell peppers, carrots, and green onions, and stir-fry until tender but crisp, around 3–4 minutes.
- Return the chicken to the skillet, add lo mein noodles, soy sauce, and minced garlic. Mix well until noodles are coated.
- Serve hot and drizzle extra soy sauce if desired.
Notes
Marinate chicken in soy sauce for extra flavor. Adjust soy sauce amount for less saltiness.
