Description

A delightful blend of tender chicken, vibrant vegetables, and lo mein noodles, perfect for a comforting family dinner.


Ingredients

  • 3–4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Heat a large skillet or wok over medium-high heat and add sesame oil.
  2. Sauté the chicken breasts until golden brown and fully cooked, about 6–8 minutes. Remove and set aside.
  3. In the same skillet, add sliced bell peppers, carrots, and green onions, and stir-fry until tender but crisp, around 3–4 minutes.
  4. Return the chicken to the skillet, add lo mein noodles, soy sauce, and minced garlic. Mix well until noodles are coated.
  5. Serve hot and drizzle extra soy sauce if desired.

Notes

Marinate chicken in soy sauce for extra flavor. Adjust soy sauce amount for less saltiness.
