Description

A delightful and quick Chicken Lo Mein recipe featuring tender chicken, colorful vegetables, and savory noodles, perfect for busy weeknights.

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 8 ounces Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 3 green onions, chopped
  • 2 tablespoons sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced

Instructions

  1. Prepare all ingredients: chop the bell peppers, slice the carrots, and cook Lo Mein noodles according to package instructions until al dente.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add chicken to the skillet and sauté for 6-8 minutes until fully cooked and golden brown. Remove chicken from skillet.
  4. Add bell peppers, carrots, and green onions to the skillet and stir-fry for 3-4 minutes until slightly softened.
  5. Add minced garlic and sauté for an additional minute.
  6. Return cooked chicken to the skillet and toss everything together.
  7. Pour in soy sauce and mix well, ensuring noodles absorb flavors.
  8. Serve in bowls, garnished with additional green onions.

Notes

Feel free to customize the dish with your favorite vegetables or proteins. Consider low-sodium soy sauce for a healthier option.
