Description

Ingredients

  • 3–4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Heat a large skillet or wok over medium-high heat and add sesame oil.
  2. Sauté the chopped chicken until golden brown and fully cooked, about 6–8 minutes. Remove from skillet and set aside.
  3. In the same skillet, stir-fry the bell peppers, sliced carrots, and green onions for 3–4 minutes until tender but crisp.
  4. Return the cooked chicken to the skillet, mixing with the vegetables.
  5. Add the lo mein noodles, soy sauce, and minced garlic. Toss everything together to combine.

Notes

For perfect results, prepare all ingredients ahead of time and keep them moving in the pan to prevent burning.
