Ingredients
- 4 chicken breast fillets (about 20 oz or 567g)
- 30g flour (1/4 cup)
- 1/4 tsp (1 ml) salt
- 1/4 tsp (1 ml) pepper
- 2 tbsp (30 ml) olive oil
- 2 cloves garlic, finely chopped
- 1/4 cup (60 ml) chopped fresh parsley
- 1 cup (240 ml) fresh sliced mushrooms
- 120ml chicken broth (1/2 cup)
Instructions
- Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound them to a thickness of 1/4 inch.
- Combine the flour, salt, and pepper in a bowl. Dredge the chicken in the flour mixture, ensuring to remove any extra coating.
- Warm olive oil in a 10-inch skillet over medium-high flame. Sauté the garlic and parsley in the oil for 5 minutes, stirring regularly.
- Put the chicken in the skillet. Cook, flipping once, until it develops a golden-brown color.
- Introduce the mushrooms and chicken broth to the skillet.
- Continue cooking for 8 to 10 minutes, turning the chicken once, until it is fully cooked through and no longer pink in the center.
