Ingredients
- – 2 pounds (900g) ground chicken
- – 1/2 cup (120 ml) grated Parmesan cheese
- – 1/2 cup (120 ml) dried breadcrumbs
- – 2 eggs
- – 1 small onion, finely chopped
- – 2 garlic cloves, minced
- – 2 tablespoons (30 ml) milk
- – 1/4 cup (60 ml) fresh parsley, chopped
- – 1 teaspoon (5 ml) dried oregano
- – 1 tablespoon (15 ml) Worcestershire sauce
- – 1/2 teaspoon (3 ml) salt
- – 1/4 teaspoon (1 ml) black pepper
- – 1/2 cup (120 ml) ketchup
- – 2 tablespoons (30 ml) brown sugar
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) onion powder
- – 1/4 teaspoon (1 ml) salt
Instructions
- Warm up your oven to 375°F (190°C), and cover a quarter-size baking tray with foil. Put it aside for later use.
- In a big mixing bowl, blend together the ground chicken, Parmesan cheese, breadcrumbs, and eggs. Incorporate the diced onion, crushed garlic, milk, parsley, oregano, Worcestershire sauce, salt, and pepper. Stir everything until it’s well mixed, but be careful not to overdo it.
- For the Glaze: In a separate small bowl, thoroughly blend the ketchup, brown sugar, garlic powder, onion powder, and salt until smooth.
- Mold the mixture into a loaf measuring approximately 9×5 inches (about 23×12 cm) on the baking sheet you’ve prepared.
- Evenly coat the top of the loaf with the glaze.
- Move the loaf into the preheated oven and cook for roughly 55-60 minutes, or until it reaches an internal temperature of 165°F (74°C).
- When done, take the meatloaf out of the oven and allow it to rest for 10-15 minutes before cutting. Slice the loaf and pair it with steamed broccoli and mashed potatoes for serving.
