Description

A heartwarming dish of tender chicken breasts baked with zesty seasonings and bubbling mozzarella, perfect for a comforting dinner.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • 16 oz can chopped tomatoes
  • 3 cloves garlic, minced
  • ½ red onion, chopped
  • 1 tsp oregano
  • 1 cup shredded mozzarella
  • 2-3 fresh basil leaves
  • 2 tbsp olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken breasts dry and score lightly.
  3. Season with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  4. Drizzle with olive oil to coat.
  5. In a mixing bowl, whisk together chopped tomatoes, minced garlic, chopped red onion, oregano, salt, and pepper.
  6. Place the seasoned chicken in a baking dish and pour the tomato mixture over the top.
  7. Sprinkle shredded mozzarella over the chicken.
  8. Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
  9. Broil for 2-3 minutes for a crispy top.
  10. Garnish with fresh basil leaves before serving.

Use high-quality canned tomatoes for the best flavor. Adjust seasonings to taste or add crushed red pepper for heat.
