Ingredients
- – 2 chicken breasts (500g)
- – 1/2 teaspoon garlic powder (2.5 ml)
- – Salt & pepper to taste
- – Flour for dredging
- – 3 tablespoons olive oil, divided (45 ml)
- – 1 tablespoon beef butter (15g)
- – 8 ounces cremini mushrooms, sliced (225g)
- – 1/2 medium onion, chopped
- – 1 tablespoon Dijon mustard or more, to taste (15g)
- – 1 tablespoon Worcestershire sauce or more, to taste (15 ml)
- – 3 cloves garlic, minced
- – 2/3 cup chicken broth (160 ml)
- – 1/2 cup full-fat sour cream (120g)
Instructions
- Slice the chicken into 1-inch cubes. Dust them with garlic powder and a good amount of salt and pepper, then roll each piece in flour.
- Pour 2 tablespoons of olive oil into a deep frying pan and set it over medium-high heat. Brown the chicken in two rounds to avoid overcrowding and ensure even browning. Once the pan is properly heated, place the chicken pieces in and cook each side for approximately 3 minutes, flipping them once with tongs, until they’re fully cooked (165°F) and lightly golden. The second batch cooks quicker as the pan gets hotter; you may need to lower the heat a bit. Add another tablespoon of oil for the second round if the pan dries out. Move the cooked chicken to a separate dish.
- Introduce the beef butter to the skillet and let it melt before adding the mushrooms and onions. Stir-fry them for 6-8 minutes until they release their moisture and get a good sear.
- Mix in the Dijon mustard, Worcestershire sauce, and minced garlic. Let them cook for around a minute.
- Pour in the chicken broth and deglaze the pan by scraping any browned remnants from the base. Return the chicken to the pan and let it cook for another 2 minutes, stirring every so often.
- Incorporate the sour cream and allow it to warm through for about a minute, ensuring it doesn’t boil too much to prevent curdling. Adjust the seasoning with more salt and pepper if needed, and serve without delay.
