Description

A timeless comfort food made with juicy chicken, fresh vegetables, and hearty noodles, perfect for any occasion.


Ingredients

  • 1.5 lbs bone-in, skin-on chicken
  • 4 cups water
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 medium onion, diced
  • 2 cups egg noodles or whole grain noodles
  • 2 tsp thyme, dried
  • 2 tsp parsley, dried
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the chicken on medium heat until golden.
  2. Add water, carrots, celery, onion, thyme, and parsley to the pot.
  3. Bring to a boil, then reduce heat and simmer for about 2 hours, until chicken is tender.
  4. Remove chicken, shred it, and return it to the pot.
  5. In a separate pot, cook noodles until al dente, then drain and add to the soup.
