Ingredients
- 1.5 lbs bone-in, skin-on chicken
- 4 cups water
- 2 cups carrots, diced
- 2 cups celery, diced
- 1 medium onion, diced
- 2 cups egg noodles or whole grain noodles
- 2 tsp thyme, dried
- 2 tsp parsley, dried
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken on medium heat until golden.
- Add water, carrots, celery, onion, thyme, and parsley to the pot.
- Bring to a boil, then reduce heat and simmer for about 2 hours, until chicken is tender.
- Remove chicken, shred it, and return it to the pot.
- In a separate pot, cook noodles until al dente, then drain and add to the soup.
- Stir in garlic and season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
