Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) black pepper
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1 teaspoon (5 ml) paprika
  • 1 cup all-purpose flour (240 ml)
  • 8 eggs, beaten
  • 3 cups seasoned breadcrumbs (360 g)
  • vegetable oil, for frying
  • 1 cup tomato sauce (240 ml)
  • 8 oz beef mozzarella cheese, sliced or shredded (225 g)
  • 1/4 cup grated Parmesan cheese (60 g)
  • fresh basil, chopped, to garnish


Instructions

  1. Place the cubed chicken breasts, salt, pepper, oregano, garlic powder, onion powder, and paprika into a food processor, then blend until the mixture is smooth and well-incorporated.
  2. Line a 10-inch (25 cm) cake pan with plastic wrap, and press the chicken mixture evenly into the base. Fold the wrap over the top to seal and flatten, then place in the freezer until it’s completely solidified, about 2-4 hours.
  3. Prepare three shallow dishes separately with flour, beaten eggs, and breadcrumbs.
  4. Remove the solid chicken disc from the freezer, unwrap it, and coat it with flour, ensuring excess is removed.
  5. Dip the floured chicken into the beaten eggs, then thoroughly coat it with breadcrumbs, pressing them in to adhere well.
  6. Place the breaded chicken disc back in the freezer for about 15 minutes.
  7. Turn the oven to the broil setting.
  8. Heat vegetable oil in a large, deep pan to reach a temperature of 400°F (200°C).
  9. Gently place the chicken disc into the hot oil using tongs, avoiding any splashing. If browning unevenly, carefully flip it to achieve a uniform golden color on both sides.
  10. Once golden brown, remove the chicken disc from the oil and place it on a wire rack, using paper towels to soak up any extra oil.
  11. Spread tomato sauce evenly over the crispy chicken disc.
  12. Arrange mozzarella cheese on top of the sauce, followed by a sprinkle of Parmesan cheese.
  13. Broil the assembled dish for 5-8 minutes, or until the cheese is melted, bubbly, and turns a golden hue.
  14. Finish by adding chopped basil on top, cut into slices, and serve.
