Ingredients
- 2 boneless, skinless chicken breasts, cubed
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1 teaspoon (5 ml) paprika
- 1 cup (240 ml) flour
- 8 eggs, beaten
- 3 cup (720 ml) s seasoned bread crumbs
- Oil, for frying
- 1 cup (240 ml) tomato sauce
- 8 oz (227 g) mozzarella cheese, sliced or shredded
- 1/4 cup (60 ml) grated Parmesan cheese
- Fresh basil, chopped, to garnish
Instructions
- Place the chicken pieces, along with the salt, pepper, oregano, garlic powder, onion powder, and paprika, into a food processor and blend until the mixture is smooth and uniform, with no large pieces remaining.
- Line a 10-inch (25 cm) cake tin with plastic wrap and spread the chicken mixture evenly on the base. Fold the extra plastic wrap over the top and press down to form a flat disc. Freeze until it is completely solid, about 2-4 hours.
- Set up three shallow dishes, filling one with flour, another with the beaten eggs, and the last with seasoned bread crumbs.
- Take the frozen chicken disc out of the plastic wrap and coat it in flour, removing any surplus.
- Dip the floured disc into the eggs, ensuring it is fully covered, then thoroughly coat it with bread crumbs, pressing them firmly onto the chicken.
- Place the breaded chicken in the freezer for 15 minutes.
- Turn your oven to the broil setting.
- Heat oil in a large, deep pan until it reaches 400°F (200°C), filling it about halfway up the side.
- Using tongs, gently place the chicken disc into the hot oil, avoiding splashes. If one side browns faster, carefully flip it to achieve a deep golden color on both sides.
- Lift the chicken disc from the oil and set it on a wire rack. Use paper towels to blot away any excess oil.
- Spread tomato sauce evenly over the fried chicken disc.
- Arrange mozzarella on top of the sauce, then sprinkle Parmesan cheese over it.
- Broil in the oven for 5-8 minutes until the cheese becomes bubbly and golden.
- Garnish with chopped basil, slice into portions, and serve.
