Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) black pepper
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1 teaspoon (5 ml) paprika
  • 1 cup (240 ml) flour
  • 8 eggs, beaten
  • 3 cup (720 ml) s seasoned bread crumbs
  • Oil, for frying
  • 1 cup (240 ml) tomato sauce
  • 8 oz (227 g) mozzarella cheese, sliced or shredded
  • 1/4 cup (60 ml) grated Parmesan cheese
  • Fresh basil, chopped, to garnish


Instructions

  1. Place the chicken pieces, along with the salt, pepper, oregano, garlic powder, onion powder, and paprika, into a food processor and blend until the mixture is smooth and uniform, with no large pieces remaining.
  2. Line a 10-inch (25 cm) cake tin with plastic wrap and spread the chicken mixture evenly on the base. Fold the extra plastic wrap over the top and press down to form a flat disc. Freeze until it is completely solid, about 2-4 hours.
  3. Set up three shallow dishes, filling one with flour, another with the beaten eggs, and the last with seasoned bread crumbs.
  4. Take the frozen chicken disc out of the plastic wrap and coat it in flour, removing any surplus.
  5. Dip the floured disc into the eggs, ensuring it is fully covered, then thoroughly coat it with bread crumbs, pressing them firmly onto the chicken.
  6. Place the breaded chicken in the freezer for 15 minutes.
  7. Turn your oven to the broil setting.
  8. Heat oil in a large, deep pan until it reaches 400°F (200°C), filling it about halfway up the side.
  9. Using tongs, gently place the chicken disc into the hot oil, avoiding splashes. If one side browns faster, carefully flip it to achieve a deep golden color on both sides.
  10. Lift the chicken disc from the oil and set it on a wire rack. Use paper towels to blot away any excess oil.
  11. Spread tomato sauce evenly over the fried chicken disc.
  12. Arrange mozzarella on top of the sauce, then sprinkle Parmesan cheese over it.
  13. Broil in the oven for 5-8 minutes until the cheese becomes bubbly and golden.
  14. Garnish with chopped basil, slice into portions, and serve.
