Description

A comforting and flavorful Italian-American dish featuring juicy chicken, crispy breadcrumbs, and rich marinara sauce, perfect for family gatherings and weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce
  • 1.5 cups shredded whole milk mozzarella cheese
  • 0.5 cup freshly grated parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper.
  2. Set up your breading station: in one bowl, whisk together two eggs and minced garlic; in another, mix the panko breadcrumbs with Italian seasoning.
  3. Dip each chicken breast into the egg mixture, ensuring it is well-coated. Coat the chicken with the panko breadcrumb mixture until fully covered.
  4. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish. Top with marinara sauce, and then layer on the mozzarella and Parmesan cheese.
  6. Bake for 20 minutes, or until bubbly and golden brown. Allow to rest for 5 minutes before serving.

Notes

For added flavor, use fresh garlic and consider adding fresh herbs like basil or parsley to the breadcrumb mixture. Serve with a side of spaghetti or salad.
