Description

A classic chicken parmesan that combines crispy chicken cutlets with savory marinara and melted mozzarella, creating a dish that’s perfect for family gatherings or entertaining friends.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup breadcrumbs
  • â…“ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • Freshly cracked black pepper
  • 1 egg
  • ½ cup all-purpose flour
  • ¼ cup cooking oil
  • ½ cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. Use a sharp knife to carefully filet the chicken breasts lengthwise into two cutlets, creating a total of four cutlets.
  2. Lightly season both sides of the chicken with salt, pepper, Italian seasoning, and garlic powder.
  3. In a wide shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and freshly cracked pepper.
  4. In another shallow bowl, whisk the egg until smooth.
  5. In a third bowl, add the flour.
  6. Dredge each piece of chicken in the flour, then dip in the egg mixture, and finally coat in the seasoned breadcrumbs.
  7. Heat the cooking oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
  8. Flip the chicken, reduce heat to medium, top with marinara sauce and mozzarella, cover, and cook for 5-7 additional minutes.
  9. Serve hot topped with fresh parsley, alongside spaghetti and additional marinara.

Notes

Ensure the oil is adequately heated before frying for best results. Personalize seasonings to taste, and consider broiling the cheese for a crispy finish.
