Ingredients

  • 2 Chicken Breasts (225-450g), *see notes
  • 1/2 tsp (3 ml) Garlic Powder
  • 1/2 tsp (3 ml) Salt
  • 1/4 tsp (1 ml) Pepper
  • 1/2 tsp (3 ml) Red Pepper Flakes, *optional
  • 1/2 tsp (3 ml) Dried Oregano
  • 1/2 tsp (3 ml) Olive Oil
  • 2-3 Tbsp (38 ml) Spinach Walnut Pesto, *see notes, more as needed
  • 2 Flatbreads, *see notes
  • 1/2 cup (120 ml) Spinach Walnut Pesto
  • 3/4 cup (180 ml) Mozzarella
  • 1/4 cup (60 ml) Tomatoes, sliced
  • Red Pepper Flakes, optional
  • Grated Parmesan, optional


Instructions

  1. If you’re preparing the spinach walnut pesto, start with that. Otherwise, cut the chicken breasts into small, bite-sized cubes and place them in a bowl. In a separate small bowl, combine the spices and sprinkle them over the chicken pieces, ensuring even coating. Heat 1/2 teaspoon of olive oil in a skillet or pan, and cook the chicken, stirring frequently, for about 12-15 minutes until fully cooked.
  2. While the chicken cooks, set your oven to preheat at 375°F. Stir in around 2 tablespoons of pesto with the chicken in the pan, just enough to give it flavor. Reduce the heat to low, let it simmer gently for 2 minutes, then turn off the heat. Set the chicken mixture aside.
  3. Place the flatbread on a baking sheet. Spread a moderate layer of pesto evenly over the surface of the bread, and then layer with mozzarella cheese, sliced tomatoes, and finally, the chicken pieces.
  4. Place the baking sheet on the center rack of the oven and bake for approximately 10 minutes, or until the cheese is melted and bubbly, and the crust achieves a light golden color. Allow to cool for a couple of minutes, cut into slices, and savor your creation!

  • For a healthier twist, opt for whole wheat flatbreads instead of regular ones.
  • Adjust the red pepper flakes to your taste for a personalized level of spiciness.
