Ingredients

  • – 1-2 chicken breasts (225-450g), *see notes
  • – 1/2 tsp (3 ml) garlic powder
  • – 1/2 tsp (3 ml) salt
  • – 1/4 tsp (1 ml) pepper
  • – 1/2 tsp (3 ml) red pepper flakes, *optional
  • – 1/2 tsp (3 ml) dried oregano
  • – 1/2 tsp (3 ml) vegetable oil
  • – 2-3 Tbsp (38 ml) spinach walnut pesto, *see notes, more as needed
  • – 2 flatbreads, *see notes
  • – 1/2 cup (120 ml) spinach walnut pesto
  • – 3/4 cup (180 ml) shredded mozzarella
  • – 1/4 cup (60 ml) tomatoes, sliced
  • – red pepper flakes, optional
  • – grated Parmesan, optional


Instructions

  1. If you are preparing spinach walnut pesto, make this first. Otherwise, dice the chicken breasts into small, bite-sized pieces and place them in a bowl. Combine the seasonings in a separate small bowl, then sprinkle over the chicken and mix thoroughly. Heat 1/2 teaspoon of vegetable oil in a skillet or pan, then cook the chicken, stirring frequently, for about 12-15 minutes or until thoroughly cooked.
  2. While the chicken is cooking, preheat the oven to 375°F. Add approximately 2 tablespoons of pesto to the skillet with the chicken, stirring to coat the chicken with the flavor. Reduce the heat to low, let it simmer for 2 minutes, then turn off the heat and set aside.
  3. Place the flatbreads onto a baking sheet. Spread a thin layer of pesto evenly over the bread, then layer with shredded mozzarella, sliced tomatoes, and finally, the prepared chicken.
  4. Bake on the middle rack of the oven for around 10 minutes or until the cheese has melted, is bubbly, and the crust has a slight golden hue. Allow it to cool for a minute or two, then slice and serve. Enjoy!
