Ingredients

  • 450g boneless skinless chicken breasts, cut into bite-sized pieces (1 lb)
  • 1/2 teaspoon (3 ml) salt, to taste
  • 1/4 teaspoon (1 ml) ground black pepper, or to taste
  • 3 tablespoons (45 ml) olive oil, divided
  • 340g dry penne pasta (12 oz)
  • 1 cup (240 ml) homemade or store-bought pesto
  • 1 cup (240 ml) ricotta cheese
  • 1/4 cup (60 ml) sour cream
  • 3 tablespoons (45 ml) grated plant-based Parmesan cheese


Instructions

  1. Set your oven to 375°F (190°C) to preheat.
  2. Sprinkle salt and pepper over the chicken pieces. Warm up 2 tablespoons of olive oil in a pan and cook the chicken until thoroughly done, approximately 15 minutes, then place it aside.
  3. While the chicken is cooking, follow the directions on the pasta package to prepare it. Drizzle with the remaining tablespoon of olive oil and keep it aside.
  4. Combine the pesto, ricotta, and sour cream in a bowl until the mixture is smooth. Mix in the cooked chicken and pasta, ensuring everything is well coated. Move the mixture to a big baking dish and top it with grated Parmesan.
  5. Place in the oven and bake for roughly 30 minutes, then serve and savor the dish.
