Ingredients
- 450g boneless skinless chicken breasts, cut into bite-sized pieces (1 lb)
- 1/2 teaspoon (3 ml) salt, to taste
- 1/4 teaspoon (1 ml) ground black pepper, or to taste
- 3 tablespoons (45 ml) olive oil, divided
- 340g dry penne pasta (12 oz)
- 1 cup (240 ml) homemade or store-bought pesto
- 1 cup (240 ml) ricotta cheese
- 1/4 cup (60 ml) sour cream
- 3 tablespoons (45 ml) grated plant-based Parmesan cheese
Instructions
- Set your oven to 375°F (190°C) to preheat.
- Sprinkle salt and pepper over the chicken pieces. Warm up 2 tablespoons of olive oil in a pan and cook the chicken until thoroughly done, approximately 15 minutes, then place it aside.
- While the chicken is cooking, follow the directions on the pasta package to prepare it. Drizzle with the remaining tablespoon of olive oil and keep it aside.
- Combine the pesto, ricotta, and sour cream in a bowl until the mixture is smooth. Mix in the cooked chicken and pasta, ensuring everything is well coated. Move the mixture to a big baking dish and top it with grated Parmesan.
- Place in the oven and bake for roughly 30 minutes, then serve and savor the dish.
