Ingredients

  • 2 skinless, boneless chicken breast halves (450g)
  • 1 teaspoon seasoned salt (5g)
  • 1 tablespoon olive oil (15ml)
  • 1 tablespoon vegetable oil (15ml)
  • 5 large onion, sliced
  • 5 medium green bell pepper, sliced
  • 2 large fresh mushrooms, sliced
  • 2 (10-inch) hoagie rolls, split lengthwise
  • 4 slices provolone cheese
  • 4 slices tomato, or to taste
  • 4 leaves lettuce, shredded, or to taste
  • 2 teaspoons mayonnaise, or to taste (10ml)


Instructions

  1. Warm up the grill to a medium setting and lightly grease the grill grate.
  2. Position the chicken between two pieces of thick plastic on your workspace. Use the smooth side of a meat mallet to flatten the chicken to 1/2 inch thickness.
  3. Grill the chicken breasts until there’s no pink left in the center and the juices are clear, about 2 to 3 minutes per side. Ensure an instant-read thermometer shows at least 165°F (74°C). Take them off the grill, shred them, and sprinkle with seasoned salt.
  4. In a skillet over medium heat, warm the olive oil and vegetable oil. Add the sliced onion, bell pepper, and mushrooms; sauté them until they’re browned, about 5 to 7 minutes. Mix in the shredded chicken and cook until it’s thoroughly heated, about 2 to 3 minutes more.
  5. Adjust an oven rack so it is about 6 inches away from the broiler and heat up the broiler. Cover a baking sheet with aluminum foil.
  6. Arrange the bottoms of the hoagie rolls on the foil-lined sheet. Put the tops aside for now.
  7. Evenly distribute half of the chicken mixture onto each roll base, then lay two slices of provolone cheese on top of each.
  8. Broil the sandwiches until the cheese is melted and the rolls are crispy, for about 2 to 3 minutes. Take them out of the oven.
  9. Add tomato slices and shredded lettuce to each sandwich. Spread mayonnaise on the inside of each roll top, then close the sandwiches. Wrap each sandwich tightly in aluminum foil, using a knife to tuck any filling back inside. Allow them to rest for 1 to 2 minutes to let the flavors meld before serving.
