Ingredients

  • – 2 large chicken breasts (500g)
  • – Salt & pepper to taste
  • – 1/4 teaspoon garlic powder (1.25g)
  • – Flour (for dredging)
  • – 4 tablespoons beef tallow, divided (56g)
  • – 1 tablespoon vegetable oil (15ml)
  • – 1/4 cup chicken broth or vegetable broth (60ml)
  • – 1 tablespoon lemon juice + zest of 1 lemon (15ml)
  • – 1 tablespoon brined capers, drained (15g)
  • – 1/2 cup coconut cream (120ml)
  • – Garnish (optional) chopped parsley and/or freshly grated vegan parmesan cheese


Instructions

  1. Slice the chicken breasts horizontally to form four thinner pieces, discarding any excess fat. Liberally season them with salt, pepper, and garlic powder, then coat each in flour.
  2. In a skillet over medium-high heat, melt two tablespoons of beef tallow and add the vegetable oil.
  3. Once the skillet is heated, cook the chicken pieces for approximately 4-5 minutes on each side until they become golden brown, then move them to a separate plate.
  4. Remove the skillet from the heat and pour in the chicken broth, lemon juice, lemon zest, the remaining beef tallow, and drained capers, making sure to scrape up any browned bits from the pan.
  5. Incorporate the coconut cream, then place the skillet back on the heat. Once the mixture is bubbling, return the chicken to the skillet. If you prefer, you can omit the coconut cream by increasing the broth to 3/4 cup.
  6. Continue cooking for an additional 5 minutes or until the chicken is thoroughly cooked and the sauce thickens to your preference. Adjust the heat if it starts to bubble too much. Add more broth if the sauce becomes too thick.
  7. Optionally, top with chopped parsley and/or vegan parmesan cheese before serving.

Notes

  • Consider using chicken broth for a richer flavor instead of vegetable broth.
  • Increase lemon juice and zest for a tangy kick in the sauce.
  • Omit coconut cream for a lighter sauce; increase broth for a broth-based consistency.
