Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup orzo pasta
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 teaspoon chicken bouillon powder


Instructions

  1. Prepare the orzo according to the package instructions. Drain and set aside.
  2. Season and cook the chicken with onion powder, garlic powder, paprika, salt, and pepper in olive oil until it reaches 165°F. Dice the chicken.
  3. Melt butter with olive oil in a skillet. Sauté onion, carrots, and celery for 4-5 minutes until softened.
  4. Sprinkle flour over the sautéed vegetables to create a roux. Cook for 2-3 minutes.
  5. Whisk in chicken broth and heavy cream until smooth and thickened. Stir in chicken bouillon powder and diced chicken. Simmer until desired thickness.
  6. Fold in cooked orzo and heat through.

Notes

For best results, use fresh chicken. You can also add additional vegetables like peas or corn for extra nutrients.
