Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup orzo pasta
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy whipping cream
- 1 teaspoon chicken bouillon powder
Instructions
- Prepare the orzo according to the package instructions. Drain and set aside.
- Season and cook the chicken with onion powder, garlic powder, paprika, salt, and pepper in olive oil until it reaches 165°F. Dice the chicken.
- Melt butter with olive oil in a skillet. Sauté onion, carrots, and celery for 4-5 minutes until softened.
- Sprinkle flour over the sautéed vegetables to create a roux. Cook for 2-3 minutes.
- Whisk in chicken broth and heavy cream until smooth and thickened. Stir in chicken bouillon powder and diced chicken. Simmer until desired thickness.
- Fold in cooked orzo and heat through.
Notes
For best results, use fresh chicken. You can also add additional vegetables like peas or corn for extra nutrients.
