Description

A comforting dish that combines the flavors of chicken pot pie with pasta, featuring tender chicken, mixed vegetables, and a creamy sauce.


Ingredients

  • 8 oz pasta (any type)
  • 2 cups cooked, shredded chicken
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp thyme (optional)
  • 1 cup shredded cheese (optional)


Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add mixed vegetables and sauté for 3-4 minutes until tender.
  3. Stir in the shredded chicken, garlic powder, onion powder, salt, pepper, and thyme; cook for another 2 minutes.
  4. Add chicken broth and bring to a simmer.
  5. Stir in pasta and cook according to the package instructions until al dente.
  6. Once pasta is cooked, stir in heavy cream and cheese (if using) and mix until well combined.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Taste and adjust seasoning if necessary. Serve warm and enjoy!

Notes

For a lighter version, reduce the amount of cream. Use different vegetables based on family preferences.
