A comforting dish that combines the flavors of chicken pot pie with pasta, featuring tender chicken, mixed vegetables, and a creamy sauce.
Ingredients
- 8 oz pasta (any type)
- 2 cups cooked, shredded chicken
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tsp thyme (optional)
- 1 cup shredded cheese (optional)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add mixed vegetables and sauté for 3-4 minutes until tender.
- Stir in the shredded chicken, garlic powder, onion powder, salt, pepper, and thyme; cook for another 2 minutes.
- Add chicken broth and bring to a simmer.
- Stir in pasta and cook according to the package instructions until al dente.
- Once pasta is cooked, stir in heavy cream and cheese (if using) and mix until well combined.
- Cook for an additional 2-3 minutes until heated through.
- Taste and adjust seasoning if necessary. Serve warm and enjoy!
Notes
For a lighter version, reduce the amount of cream. Use different vegetables based on family preferences.
