Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat your large pot over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
  2. Incorporate the shredded chicken and 4 cups of chicken broth. Bring to a gentle simmer.
  3. Stir in the frozen peas, heavy cream, thyme, salt, and pepper. Mix thoroughly.
