Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour (optional, for thickening)


Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add the diced onions and garlic, sautéing until translucent.
  3. Add the chicken breasts and cook until browned.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the diced potatoes, carrots, and thyme; simmer until the vegetables are tender.
  6. If desired, whisk the flour with some of the broth until smooth, then stir back into the pot for thickness.
  7. Add the heavy cream and frozen peas, cooking until heated through.
