Ingredients
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup frozen peas
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup all-purpose flour (optional, for thickening)
Instructions
- Heat olive oil over medium heat in a large pot.
- Add the diced onions and garlic, sautéing until translucent.
- Add the chicken breasts and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Add the diced potatoes, carrots, and thyme; simmer until the vegetables are tender.
