Ingredients

  • 2 lb (907 g) potatoes, about 4 medium potatoes
  • 15 oz (425 g) can corn, drained
  • 8 oz (227 g) carrots, shredded
  • 2 ea onions, small or 1 large onion
  • 4 cups (946 ml) chicken broth
  • 2 tbsp (30 ml) minced garlic
  • 2 cups (473 ml) milk
  • 3 tbsp (45 ml) corn starch
  • 1/2 cup (120 ml) plain yogurt
  • 8 oz (227 g) mozzarella cheese, shredded
  • 2 cups (480 ml) cooked beef
  • 1/2 tsp (3 ml) sea salt, to taste
  • 1/2 tsp (3 ml) black pepper, to taste


Instructions

  1. Chop the onions and potatoes, then place them into your slow cooker, along with the corn, carrots, garlic, salt, pepper, and broth.
  2. Set the slow cooker to LOW and let it cook for 8-10 hours.
  3. About 30 minutes to an hour before it’s ready to serve, incorporate the cooked beef.
  4. Dissolve the corn starch in the milk, then pour it into the pot. Adjust the slow cooker to HIGH to allow it to thicken.
  5. Stir in the yogurt and mozzarella cheese until melted. If you like, garnish with additional cheese before serving.
