Ingredients
- 2 lb (907 g) potatoes, about 4 medium potatoes
- 15 oz (425 g) can corn, drained
- 8 oz (227 g) carrots, shredded
- 2 ea onions, small or 1 large onion
- 4 cups (946 ml) chicken broth
- 2 tbsp (30 ml) minced garlic
- 2 cups (473 ml) milk
- 3 tbsp (45 ml) corn starch
- 1/2 cup (120 ml) plain yogurt
- 8 oz (227 g) mozzarella cheese, shredded
- 2 cups (480 ml) cooked beef
- 1/2 tsp (3 ml) sea salt, to taste
- 1/2 tsp (3 ml) black pepper, to taste
Instructions
- Chop the onions and potatoes, then place them into your slow cooker, along with the corn, carrots, garlic, salt, pepper, and broth.
- Set the slow cooker to LOW and let it cook for 8-10 hours.
- About 30 minutes to an hour before it’s ready to serve, incorporate the cooked beef.
- Dissolve the corn starch in the milk, then pour it into the pot. Adjust the slow cooker to HIGH to allow it to thicken.
- Stir in the yogurt and mozzarella cheese until melted. If you like, garnish with additional cheese before serving.
