Ingredients
- 2 tbsp vegetable oil (30 ml)
- 1 lb boneless chicken breast (450 g)
- 3 scallions, chopped
- 1 tsp ground ginger (5 g)
- 8 cups chicken broth (1.9 L)
- 1 tbsp soy sauce (15 ml)
- 2 three ounce packages ramen noodles (toss out the flavor packet) (170 g)
- 4 cups baby spinach (120 g)
- Salt and pepper
Instructions
- Warm the vegetable oil in a large pot on medium-high heat. Place the chicken breast in the pot and cook until it is golden on both sides, approximately 3 minutes per side.
- Introduce the chopped scallions, ground ginger, chicken broth, and soy sauce into the pot and let it gently boil. Allow it to simmer until the chicken is fully cooked, around 10 minutes. Remove the chicken and either shred it or chop it into small, manageable pieces.
- Put the ramen noodles into the simmering liquid and cook them until they become soft, roughly 5 minutes. Mix in the chicken pieces and baby spinach, and continue to simmer until the spinach has wilted. Adjust the seasoning with salt and pepper to your liking; you can also add a bit more soy sauce if desired.
- Spoon the soup into bowls and serve immediately.
