A comforting chicken and rice casserole that’s easy to prepare and delightful to eat, perfect for family meals.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup cream of chicken soup
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheese (cheddar or your choice)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with shredded cheese.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Let it sit for a few minutes before serving.
Notes
For a quicker preparation, use leftover shredded chicken or rotisserie chicken. Adjust seasoning and cheese type based on personal preference.
