Description

A comforting chicken and rice casserole that’s easy to prepare and delightful to eat, perfect for family meals.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased 9×13 inch baking dish.
  4. Top with shredded cheese.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  7. Let it sit for a few minutes before serving.

Notes

For a quicker preparation, use leftover shredded chicken or rotisserie chicken. Adjust seasoning and cheese type based on personal preference.
