Ingredients
- 2 cups basmati rice
- 1 pound chicken, diced
- 1 onion, chopped
- 2 carrots, diced
- 4 cups chicken broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large casserole dish, combine the basmati rice, diced chicken, chopped onion, diced carrots, and garlic powder.
- Pour the chicken broth over the mixture and stir to combine.
- Season with salt and pepper to taste.
- Cover the dish with foil and bake for 45 minutes.
- If desired, remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
