A comforting Chicken Rice Casserole made with tender rice, shredded chicken, and creamy soup, perfect for busy weeknight dinners.
Ingredients
- 2 cups cooked rice
- 2 cups cooked chicken, shredded
- 1 cup cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup frozen mixed vegetables
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, shredded cheese, mixed vegetables, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Transfer the mixture into a greased casserole dish.
- Cover the dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For added flavor, use homemade chicken broth and consider topping with breadcrumbs for a crunchy finish.
