A versatile and refreshing chicken and rice salad with tender chicken, crunchy water chestnuts, and a creamy dressing.
Ingredients
- 1 box of Rice-A-Roni (butter flavor)
- 1 cup cooked shredded chicken
- 1 cup water chestnuts, chopped
- 1 cup golden rice vermicelli
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Cook the Rice-A-Roni according to package instructions and let it cool.
- In a large bowl, combine the cooked Rice-A-Roni, shredded chicken, water chestnuts, and rice vermicelli.
- In a separate bowl, mix together the mayonnaise, sour cream, lemon juice, salt, and pepper.
- Pour the dressing over the rice mixture and stir until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh herbs if desired and serve cold.
