Ingredients
- 1 cup cooked chicken, shredded
- 1 cup rice
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion, carrots, and celery; sauté until the vegetables are tender.
- Stir in the garlic and thyme, cooking for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Add the rice and shredded chicken; reduce heat and simmer for about 15 minutes, or until the rice is cooked.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For a unique twist, add different vegetables like peas or corn, and consider adding a pinch of cayenne pepper for a bit of heat.
