A quick and easy chicken salad made with diced chicken and chopped celery, dressed in a creamy mixture that is perfect for lunch or dinner.
Ingredients
- 2 cups cooked chicken, diced
- 1 cup celery, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced chicken and chopped celery.
- In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chicken and celery mixture and stir until well combined.
- If desired, add grapes, nuts, or herbs for extra flavor.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of lettuce or as a sandwich filling.
Notes
Use freshly cooked chicken or rotisserie chicken. You can replace mayonnaise with Greek yogurt for a healthier alternative. Experiment with herbs or spices to customize flavors.
