This quick and easy Chicken Sausage and Broccoli Orzo dish is packed with flavor, making it a perfect weeknight meal.
Ingredients
- 12 oz chicken sausage, sliced
- 1 cup orzo pasta
- 2 cups broccoli florets
- 2 ½ cups chicken broth
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ¼ cup Parmesan (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and brown for about 3-4 minutes, until golden. Remove the sausage from the skillet and set aside.
- In the same skillet, sauté the chopped onion and minced garlic until soft and fragrant, about 2-3 minutes.
- Add the orzo pasta to the skillet and toast it for 1-2 minutes, stirring until slightly golden.
- Pour in the chicken broth and let it simmer for 8-10 minutes until the orzo absorbs most of the liquid.
- During the last 3 minutes of cooking, stir in the broccoli florets.
- Return the browned chicken sausage to the skillet, add the lemon juice, and stir everything together.
- Top with Parmesan cheese if desired, and serve hot.
Notes
Customize with seasonal vegetables like carrots, peas, or zucchini. Store leftovers in the refrigerator for up to three days.
