Description

This quick and easy Chicken Sausage and Broccoli Orzo dish is packed with flavor, making it a perfect weeknight meal.


Ingredients

  • 12 oz chicken sausage, sliced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 ½ cups chicken broth
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup Parmesan (optional)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and brown for about 3-4 minutes, until golden. Remove the sausage from the skillet and set aside.
  2. In the same skillet, sauté the chopped onion and minced garlic until soft and fragrant, about 2-3 minutes.
  3. Add the orzo pasta to the skillet and toast it for 1-2 minutes, stirring until slightly golden.
  4. Pour in the chicken broth and let it simmer for 8-10 minutes until the orzo absorbs most of the liquid.
  5. During the last 3 minutes of cooking, stir in the broccoli florets.
  6. Return the browned chicken sausage to the skillet, add the lemon juice, and stir everything together.
  7. Top with Parmesan cheese if desired, and serve hot.

Notes

Customize with seasonal vegetables like carrots, peas, or zucchini. Store leftovers in the refrigerator for up to three days.
