A delightful weeknight meal featuring tender chicken and creamy garlic parmesan rice, perfect for family gatherings.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups rice
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian herbs (or mixed dried herbs)
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, and add to the skillet. Cook until golden brown and fully cooked, about 5-7 minutes on each side. Remove from skillet and set aside.
- Add garlic to the same skillet and sauté until fragrant. Pour in the rice and toast for 1-2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until rice is cooked, about 18-20 minutes.
- Stir in heavy cream and parmesan cheese once the rice is done. Mix well and add Italian herbs.
- Return chicken to the skillet; stir to combine and heat through.
- Serve garnished with fresh parsley.
