Description

A delightful weeknight meal featuring tender chicken and creamy garlic parmesan rice, perfect for family gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups rice
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs (or mixed dried herbs)
  • Salt and pepper, to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, and add to the skillet. Cook until golden brown and fully cooked, about 5-7 minutes on each side. Remove from skillet and set aside.
  2. Add garlic to the same skillet and sauté until fragrant. Pour in the rice and toast for 1-2 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until rice is cooked, about 18-20 minutes.
  4. Stir in heavy cream and parmesan cheese once the rice is done. Mix well and add Italian herbs.
  5. Return chicken to the skillet; stir to combine and heat through.
  6. Serve garnished with fresh parsley.
