Description

A delightful chicken scampi pasta dish combining the heartiness of chicken and the delightful texture of pasta, infused with garlic and zesty lemon.


Ingredients

  • 8 oz spaghetti or linguine
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup chicken broth
  • 1 lemon, juiced and zested
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Cook your pasta according to the package instructions, then drain it well.
  2. In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Add the chicken pieces and cook until brown and no longer pink in the center.
