Ingredients

  • 1 lb (454 g). chicken tenderloins
  • Salt and pepper
  • 1/2 teaspoon (3 ml) garlic powder
  • 2 tablespoon (30 ml) s olive oil
  • 1 stick butter, divided
  • 2 tablespoon (30 ml) s minced garlic
  • 1/4 teaspoon (1 ml) red pepper flakes
  • 1 1/2 teaspoon (8 ml) s salt, divided
  • 1/2 cup (120 ml) apple juice
  • 1 1/2 cup (360 ml) s uncooked white rice
  • 3 cup (720 ml) s chicken broth
  • 1/2 cup (120 ml) fresh grated parmesan cheese


Instructions

  1. Coat the chicken tenderloins with salt, pepper, and garlic powder. Warm olive oil in a large nonstick pan over medium heat. Cook the chicken until it’s golden and thoroughly done. Take the chicken out, cover it, and put it aside.
  2. In the same pan, add butter, garlic, red pepper flakes, and 1/2 teaspoon of salt. Sauté the garlic for about 3 minutes, ensuring it doesn’t burn or overly brown.
  3. Raise the heat to medium-high and pour in the apple juice. Stir briskly with a wooden spoon to mix the juice with the butter. Let it cook for around 5 minutes, or until the liquid reduces by half. Reserve 2 tablespoons of the sauce for later use.
  4. Introduce the rice to the pan, stirring and cooking for 3-4 minutes until it starts to lightly brown. Pour in the chicken broth and the remaining 1 teaspoon of salt.
  5. Allow the mixture to reach a gentle boil, then lower the heat to medium-low, cover the pan, and let it cook for 20 minutes or until the rice is soft. Stir once or twice during the first 15 minutes, but not more than that.
  6. Scatter parmesan cheese over the rice and place the chicken tenderloins on top. Pour the reserved pan sauce over the chicken. Cover the pan, take it off the heat, and let it rest for 5 minutes. Optionally, garnish with additional parmesan and chopped fresh parsley.
