Ingredients

  • 6 thin sliced chicken breasts (about 900g)
  • 1 container green onion cream cheese
  • 60 ml (1/4 cup) olive oil
  • 120 ml (1/2 cup) chicken broth
  • 1 Large package sliced mushrooms
  • 1 small bag fresh baby spinach
  • 1 dash Weber Herb and Garlic Seasoning
  • 1 dash pepper
  • 8 oz (227 g) shredded mozzarella cheese


Instructions

  1. In a 9×13 baking dish, arrange the chicken breasts in a single layer, then layer the fresh baby spinach and sliced mushrooms on top. Sprinkle with the Herb and Garlic Seasoning and pepper.
  2. Soften the green onion cream cheese and combine it with olive oil and chicken broth by whisking until smooth. Drizzle this mixture over the chicken and vegetables. Cover the dish loosely with foil, ensuring it is not tightly sealed.
  3. Preheat your oven to 375°F and bake the dish for 20 minutes. Afterward, take off the foil and continue baking uncovered for an additional 20-25 minutes.
  4. Scatter the shredded mozzarella cheese over the top and return to the oven to bake uncovered for a further 10 minutes, or until the cheese begins to brown. Allow to cool for 10 minutes before serving.
