Ingredients
- 2 small flour tortillas (85 g)
- 85 g cooked boneless, skinless chicken breast (shredded)
- 30 ml chicken broth
- 240 ml fresh spinach
- 60 ml red pepper, cooked and diced
- 5 ml olive oil
- 60 ml cheddar cheese, shredded
- 5 ml black pepper, ground
- 5 ml chili powder
- 60 ml salsa
- 5 ml cumin, ground
- 30 ml plain yogurt
Instructions
- Place the shredded chicken, chicken broth, and seasonings into a skillet and heat on medium, stirring now and then.
- Add the diced red pepper and fresh spinach, cooking until the spinach wilts.
- In a different skillet, heat the olive oil over medium. Lay one flour tortilla in the skillet, pressing it to coat with oil. Take it out and lay it oil side up on a flat surface, then put the second tortilla in the skillet. Scatter the shredded cheese over the tortilla and let it cook briefly for about 30 seconds. Gently lift the tortilla to prevent sticking. Evenly distribute the chicken and spinach mixture over the melted cheese, then carefully take the tortilla out with a spatula. Place the first oiled tortilla back in the skillet and let it brown. When ready, remove it and position it atop the chicken and spinach layer.
- Press down on the quesadilla using a spatula, then cut it into four equal sections using a pizza cutter. Serve with salsa and plain yogurt. Enjoy!
