Description

Delicious chicken street tacos with marinated grilled chicken, fresh toppings, and warm corn tortillas, perfect for gatherings.


Ingredients

  • 2 Chicken breasts
  • 8 Corn tortillas
  • 1 Onion, chopped
  • 1/2 cup Cilantro, chopped
  • 1 Lime, cut into wedges
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Begin by marinating the chicken. Mix olive oil, minced garlic, cumin, paprika, salt, and pepper in a bowl. Coat the chicken breasts thoroughly with this mixture, and let them sit for at least 30 minutes.
  2. Preheat your grill to medium-high. Place the marinated chicken on the grill once it’s hot. Cook until fully cooked, about 6-8 minutes per side, or until the juices run clear.
  3. Meanwhile, warm the corn tortillas either on the grill or in a skillet.
  4. Once the chicken is done, remove it from the grill and let it rest for a few minutes. Slice the grilled chicken into thin strips.
  5. Tuck the sliced chicken into warm tortillas.
  6. Top each taco with chopped onion and cilantro.
  7. Finally, squeeze fresh lime over the tacos right before serving.

For best results, use a resealable plastic bag for marinating and let chicken rest before slicing.
