Delicious chicken street tacos with marinated grilled chicken, fresh toppings, and warm corn tortillas, perfect for gatherings.
Ingredients
- 2 Chicken breasts
- 8 Corn tortillas
- 1 Onion, chopped
- 1/2 cup Cilantro, chopped
- 1 Lime, cut into wedges
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Paprika
- Salt, to taste
- Pepper, to taste
Instructions
- Begin by marinating the chicken. Mix olive oil, minced garlic, cumin, paprika, salt, and pepper in a bowl. Coat the chicken breasts thoroughly with this mixture, and let them sit for at least 30 minutes.
- Preheat your grill to medium-high. Place the marinated chicken on the grill once it’s hot. Cook until fully cooked, about 6-8 minutes per side, or until the juices run clear.
- Meanwhile, warm the corn tortillas either on the grill or in a skillet.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes. Slice the grilled chicken into thin strips.
- Tuck the sliced chicken into warm tortillas.
- Top each taco with chopped onion and cilantro.
- Finally, squeeze fresh lime over the tacos right before serving.
Notes
For best results, use a resealable plastic bag for marinating and let chicken rest before slicing.
