Description

Flavorful Chicken Street Tacos with seasoned chicken, fresh guacamole, and warm tortillas for a delightful meal.


Ingredients

  • 2 lbs boneless chicken thighs
  • 12 corn tortillas
  • 3 ripe avocados
  • 1 white onion
  • 1 bunch fresh cilantro
  • 2 limes
  • 4 oz queso fresco cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Season the chicken thighs generously with chili powder, cumin, paprika, salt, and pepper. Allow the chicken to marinate for at least 15 minutes.
  2. While the chicken marinates, mash the avocados in a bowl and combine with lime juice and salt to create fresh guacamole. Set aside.
  3. Dice the onion finely, chop the cilantro, crumble the queso fresco cheese, and cut the limes into wedges.
  4. Heat a skillet over medium-high heat, then add the marinated chicken. Cook for 6-8 minutes per side until the chicken is charred and cooked through.
  5. In a separate dry skillet or over an open flame, warm the corn tortillas until they are pliable and lightly charred.
