Ingredients
- 1 cup cooked brown rice
- 1 chicken breast, diced
- 1 medium sweet potato, peeled and cubed
- 2 cups spinach
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: avocado, sesame seeds for topping
Instructions
- Cook brown rice according to package instructions.
- Heat olive oil in a pan over medium heat. Add diced chicken and season with garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-7 minutes.
- Add cubed sweet potatoes and a splash of water to the pan. Cover and cook until sweet potatoes are tender, about 10-15 minutes.
- Stir in spinach and cook until wilted.
