Ingredients

  • 1 tablespoon (15 ml) olive oil, or as needed
  • 1 skinless, boneless chicken breast half, cut into cubes
  • 1 large sweet potato, peeled and cut into 1/2-inch (1 cm) pieces
  • 1 tablespoon (15 ml) apple juice
  • 1 tablespoon (15 ml) minced fresh sage
  • 1 pear – peeled, cored, and cut into 1/2-inch (1 cm) pieces
  • 120 ml water
  • 2 cups (60 g) baby spinach
  • 60 g chopped toasted hazelnuts
  • salt and ground black pepper to taste


Instructions

  1. Warm the olive oil in a frying pan over medium flame; sauté the chicken pieces in the heated oil until they achieve a golden color, about 3 to 5 minutes. Use a slotted spoon to transfer the chicken to a separate plate.
  2. In the same pan, cook and stir the sweet potato over medium heat until it begins to brown slightly, for 5 to 10 minutes; then put the chicken back into the pan. Pour in the apple juice, add the sage, pear, and water; mix everything thoroughly. Cover the pan partially, reduce the heat to medium-low, and continue cooking until the chicken is cooked through and the sweet potato is soft, around 10 minutes.
  3. Take off the cover and scatter the spinach over the chicken and sweet potato mixture; cook, stirring now and then, until the spinach has wilted, approximately 5 minutes. Mix in the hazelnuts; add salt and black pepper to your liking.

Notes

  • Use flavored olive oil like garlic-infused or lemon-infused for enhanced taste.
  • Substitute apple juice with apple cider or apple cider vinegar for added sweetness.
  • Add thyme or rosemary for extra depth of flavor, and sprinkle red pepper flakes or cayenne pepper for heat.
