Ingredients
- 2 cups cooked and diced chicken tenderloins
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 white onion, diced
- 1 red bell pepper, diced
- 1 tablespoon taco seasoning
- 1 tablespoon lime juice
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chicken, sour cream, lime juice, diced tomatoes, and taco seasoning.
- Fold in 1/2 cup of shredded cheddar cheese.
- Spray a 9×13 inch casserole dish with cooking spray.
- Layer the black beans in the dish, followed by the diced peppers and onions.
- Spread the chicken mixture evenly over the beans and veggies.
- Top with remaining cheddar cheese.
