Description

A comforting chicken taco casserole that combines bold flavors and hearty ingredients, perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 cups cooked and diced chicken tenderloins
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 white onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon taco seasoning
  • 1 tablespoon lime juice
  • Cooking spray


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, sour cream, lime juice, diced tomatoes, and taco seasoning.
  3. Fold in 1/2 cup of shredded cheddar cheese.
  4. Spray a 9×13 inch casserole dish with cooking spray.
  5. Layer the black beans in the dish, followed by the diced peppers and onions.
