Ingredients
- 1 large chicken breast (225g), cubed
- 1/2 tbsp (8 ml) olive oil + 1/2 tbsp (8 ml) olive oil
- 1/2 cup (120 ml) carrots, sliced
- 1 cup (240 ml) broccoli, chopped
- 1 tsp (5 ml) garlic powder
- 1/2 tsp (3 ml) salt
- 1 cup (240 ml) brown or white rice
- Toppings: sesame seeds, green onions chopped
Instructions
- Prepare the rice following the instructions on the packaging.
- Warm up 1/2 tablespoon of olive oil in a spacious skillet over medium heat. Introduce the carrots and broccoli. Sprinkle with garlic powder and salt. Sauté for 5 minutes until the vegetables are soft and fully cooked. Take them out of the skillet.
- Add the remaining 1/2 tablespoon of olive oil to the skillet.
- Once heated, place the chicken breast pieces in the skillet. Let them cook for 3 minutes on one side without much stirring.
- After they’ve browned on one side, turn them over. Continue cooking for an additional 3 minutes until the opposite side is golden.
- As the chicken cooks, blend all the components for the teriyaki sauce together. Mix the cornstarch with water before incorporating it.
- Add the sauce to the skillet with the chicken. Let it cook for a couple more minutes until the sauce thickens. It’s quite saucy, so you can drizzle some over the veggies too.
- Layer the bowl starting with rice, followed by the vegetables, and then the chicken teriyaki. Garnish with sesame seeds and chopped green onions before serving!
Notes
- Marinate chicken breast cubes in teriyaki sauce for 30 minutes before cooking for enhanced flavor.
- Add bell peppers or snap peas for more color and nutrients.
- Make the dish more filling by adding scrambled eggs or tofu.
