Ingredients
- 2 boneless, skinless chicken breasts, cubed
- 1 cup (240 ml) teriyaki sauce
- 2 teaspoon (10 ml) s oil
- 1/2 cup (120 ml) onion, diced
- 1 tablespoon (15 ml) garlic, minced
- 1/2 cup (120 ml) carrot, diced
- 1 cup (240 ml) broccoli floret
- 3 eggs, beaten
- 3 cup (720 ml) s brown rice, cooked
- 2 tablespoon (30 ml) s soy sauce
- 1 tablespoon (15 ml) sesame oil
- Pepper, to taste
Instructions
- Chill the chicken in teriyaki sauce in the fridge for a minimum of one hour.
- Using a wok or large frying pan, cook the chicken in the marinade over high heat until done. Remove and set aside.
- In the same pan, heat the oil and sauté onions, garlic, and carrots until the onions become clear.
- Add broccoli and continue cooking for another 3-4 minutes. Move all the cooked vegetables to one side of the pan.
- Whisk the eggs, pour them into the empty side of the pan, scramble them, and then combine with the vegetables.
- Incorporate the rice, cooked chicken, soy sauce, sesame oil, and pepper, stirring thoroughly, and allow the rice to cook until it develops a slight crispiness.
