Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup (240 ml) teriyaki sauce
  • 2 teaspoon (10 ml) s oil
  • 1/2 cup (120 ml) onion, diced
  • 1 tablespoon (15 ml) garlic, minced
  • 1/2 cup (120 ml) carrot, diced
  • 1 cup (240 ml) broccoli floret
  • 3 eggs, beaten
  • 3 cup (720 ml) s brown rice, cooked
  • 2 tablespoon (30 ml) s soy sauce
  • 1 tablespoon (15 ml) sesame oil
  • Pepper, to taste


Instructions

  1. Chill the chicken in teriyaki sauce in the fridge for a minimum of one hour.
  2. Using a wok or large frying pan, cook the chicken in the marinade over high heat until done. Remove and set aside.
  3. In the same pan, heat the oil and sauté onions, garlic, and carrots until the onions become clear.
  4. Add broccoli and continue cooking for another 3-4 minutes. Move all the cooked vegetables to one side of the pan.
  5. Whisk the eggs, pour them into the empty side of the pan, scramble them, and then combine with the vegetables.
  6. Incorporate the rice, cooked chicken, soy sauce, sesame oil, and pepper, stirring thoroughly, and allow the rice to cook until it develops a slight crispiness.
